Swiss chard or large lettuce leaves make a great gluten-free sandwich. Plus, it’s a great way to get in some extra veggies into your diet.
2 large Swiss chard leaves, washed with stems removed
½ avocado, mashed
1 tsp Dijon mustard
2-3 slices sliced turkey breast or uncured ham
Handful chopped lettuce, sliced carrots or cucumber slices
Spread mashed avocado and Dijon on chard leaves. Layer your turkey or ham and place veggies on top. Roll each leaf like a cigar and cut diagonally.
