1 cup of fresh peas
1 bunch of asparagus
½ red onion, sliced
1 kohlrabi, cut into sticks 1/8” x 1”
1 garlic clove, minced
1 tbsp. coconut oil
Sea salt, pepper
Fresh mint (optional)
Heat oil in a large skillet. Put all ingredients into the skillet and sauté for 5-7 minutes or until fork tender, but not too soft. Season with salt and pepper. Garnish with fresh mint if desired.
Don't be afraid of using a new veggie, like Kohlrabi. Just google it or view a You Tube video on how to cut it. It has a great taste and is full of fiber, Vitamin C, B-6 and magnesium.
