This recipe is super fast if you have leftover meat and veggies from a previous meal. You can always start from scratch though and saute a few veggies.

4 eggs from pastured hens
leftover cooked sausage or shredded beef, about 3/4 cup
leftover veggies, like bell peppers, onions, broccoli, mushrooms or saute some from scratch, about 1 cup
2 tbsp coconut milk
sea salt and pepper
Preheat oven to 350°. Use any leftover sausage or beef from a previous meal. Heat 1tbsp. coconut oil in an oven-safe skillet (like cast iron). Add your meat and heat through. Then, add any leftover veggies, like diced bell peppers,mushrooms, onions, sun-dried tomatoes or whatever you have on hand. Crack 4 eggs and a couple tablespoons of milk into a bowl and beat. Add egg mixture to the skillet. Season with salt and pepper. Cook for 3-5 minutes or until the bottom is set. Add cheese if desired. Then, place into the hot oven for 10-15 minutes. You can also put the oven on broil for the last 2 minutes to brown the top. Remove from the oven and slide out onto a plate. Slice like a pizza.
